Tortellini and Shrimp Salad
Recipe type: Salad
  • 1 pkg. frozen popcorn shrimp
  • 1 pkg. cheese tortellini
  • 8 cups romaine lettuce
  • 1 medium tomato, chopped
  • ½ cup Caesar dressing
  1. Cook shrimp and tortellini according to package directions. In a salad bowl, combine lettuce and tomato and drizzle with dressing. Toss to coat. Add tortellini and toss. Top with shrimp and serve.
I don't use Caesar dressing, Chris likes it with both Italian and bleu cheese, and I like it with ranch. I also prefer to buy the shrimp you bake as opposed to the kind you pan fry—it takes a little longer but no spattering involved.

You can also prepare the tortellini and shrimp in the morning when your house is cool and assemble the salad later.
