Caramel Apple Pie

Ingredients
Filling:
- 6 cups apples (Jonathan or Granny Smith)
- ½ cup packed light brown sugar
- ½ cup sugar
- ¼ cup all-purpose flour
- 1 tsp. cinnamon
- ¼ tsp. nutmeg
- ¼ tsp. salt
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- 4 Tbsp. heavy cream
- 4 Tbsp. butter
Topping:
- ½ cup all-purpose flour
- 3 Tbsp. sugar
- ½ cup butter
- 2 toffee bars or 3 oz. chocolate covered peanut or pecan brittle, crushed
- ½ cup pecans, chopped
Instructions
- Preheat oven to 450⁰.
- Peel and slice apples. Sprinkle with lemon juice. Combine dry ingredients in large bowl and add apples. Toss to mix. Add vanilla and cream. Melt butter in heavy skillet. Add apple mixture and cook approximately 8 minutes, to soften apples. Turn into pie shell.
- Combine flour and sugar. Cut in the butter until coarse crumbs. Stir in pecans. Sprinkle toffee bar on top of pie. Add streusel topping. Bake for 15 minutes. Reduce heat to 350⁰ and bake an additional 45 minutes.
