Pine Nut Couscous

- 2 cups couscous
- ¼ stick of unsalted butter
- 2 cups water or 1½ cups water and ½ cup stock or broth
- 1 tsp. salt
- ½ cup toasted pine nuts
- ½ cup Craisins or dried apricots, diced
- Cook the couscous in the liquid, butter, and salt in microwave for five minutes (stop the microwave and stir every two minutes).
- The liquid will be absorbed into the couscous—fluff with a fork and then add the pine nuts and fruit.
