Pine Nut Couscous

  • 2 cups couscous
  • ¼ stick of unsalted butter
  • 2 cups water or 1½ cups water and ½ cup stock or broth
  • 1 tsp. salt
  • ½ cup toasted pine nuts
  • ½ cup Craisins or dried apricots, diced
  1. Cook the couscous in the liquid, butter, and salt in microwave for five minutes (stop the microwave and stir every two minutes).
  2. The liquid will be absorbed into the couscous—fluff with a fork and then add the pine nuts and fruit.
