German Apple Pancake

Ingredients
  • 4 eggs
  • ½ cup flour
  • ½ tsp. baking powder
  • 1 Tbsp. sugar
  • Pinch of salt
  • 1 cup milk
  • 1 tsp. vanilla
  • 2 Tbsp. butter, melted
  • ⅛ tsp. nutmeg
Fruit Filling:
  • 4 Tbsp. butter
  • 1 large apple, sliced (peel if you prefer)
  • 3 Tbsp. sugar
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg (Not the redhead)
Instructions
  1. Blend eggs, flour, baking powder, sugar, and salt; add milk gradually. Add vanilla, 2 tablespoons butter, and nutmeg, mix thoroughly. Let stand for at least 30 minutes (unless you’re REALLY impatient or hungry).
  2. In a 10-inch ovenproof skillet melt butter, brush onto sides too. Sprinkle 2 tablespoons sugar and spices over butter. Spread apple slices evenly in pan. Sprinkle with remaining sugar. Heat over medium heat until mixture bubbles. Slowly pour batter over apples.
  3. Bake at 425⁰ for 15 minutes. Reduce oven to 375⁰ and bake an additional 10 minutes. Slide onto serving platter; cut into wedges. (Or skip the serving plate, and serve straight from the pan)
