German Apple Pancake

Ingredients
- 4 eggs
- ½ cup flour
- ½ tsp. baking powder
- 1 Tbsp. sugar
- Pinch of salt
- 1 cup milk
- 1 tsp. vanilla
- 2 Tbsp. butter, melted
- ⅛ tsp. nutmeg
Fruit Filling:
- 4 Tbsp. butter
- 1 large apple, sliced (peel if you prefer)
- 3 Tbsp. sugar
- ½ tsp. cinnamon
- ¼ tsp. nutmeg (Not the redhead)
Instructions
- Blend eggs, flour, baking powder, sugar, and salt; add milk gradually. Add vanilla, 2 tablespoons butter, and nutmeg, mix thoroughly. Let stand for at least 30 minutes (unless you’re REALLY impatient or hungry).
- In a 10-inch ovenproof skillet melt butter, brush onto sides too. Sprinkle 2 tablespoons sugar and spices over butter. Spread apple slices evenly in pan. Sprinkle with remaining sugar. Heat over medium heat until mixture bubbles. Slowly pour batter over apples.
- Bake at 425⁰ for 15 minutes. Reduce oven to 375⁰ and bake an additional 10 minutes. Slide onto serving platter; cut into wedges. (Or skip the serving plate, and serve straight from the pan)
