Brazilian Beans and Rice

Recipe type: Main
  • Beans of choice (red, black, pinto, whatever)
  • Garlic
  • Onion
  • Salt
  • Sausage or Ham
Pico de gallo:
  • Green pepper
  • Onion
  • Tomato
  • Lemon juice
  1. Cook any beans you like, red, black, pinto, etc. in plenty of water with garlic, onion, salt and any sausage/ham that you have.
  2. While the beans cook chop onion, tomato and green bell pepper and combine.
  3. When the beans are done, serve over a mountain of rice, and top with the relish and squeeze lemon juice over the whole thing.
Gloria said that in a pinch, she would just open up a can of beans, heat them up, and then sprinkle with lemon juice. The rice and relish are nice, but it's the beans and the lemon that are the necessities.
