Oatmeal Pancakes

Oatmeal Pancakes

Ingredients
  • 1 cup rolled oats
  • 1 cup milk or water, very hot and ⅓ cup dry milk
  • 1 egg
  • ⅓ cup butter, melted
  • ½ cup flour
  • 1 Tbsp. sugar
  • 2 tsp. baking powder
  • ¼ tsp. salt
Instructions
  1. Put rolled oats in mixing bowl. Add scalded milk and mix. Let stand until cool, stirring occasionally. Beat egg yolks. Gradually add melted butter, stirring constantly. Stir into cooled rolled oats mixture. Sift flour, sugar, baking powder, and salt together. Add to oats. Mix lightly but thoroughly. Beat egg whites until stiff. Fold into mixture. Drop by spoonfuls on hot, greased griddle. Spread batter gently with spoon. When cakes puff and bubble, turn and brown on other side. Turn only once. Serve hot with butter and maple syrup.
