Gammy's Lemon Meringue Pie

  • 1 cup sugar
  • 3 Tbsp. flour
  • 3 Tbsp. corn starch
  • ½ tsp. salt
  • 1½ cups water
  • 3 eggs
  • 2 Tbsp. margarine or butter
  • 1-2 tsp. lemon peel (or 2 grated rinds)
  • ⅓ cup lemon juice
  • Pie crust
  • Meringue
  1. Cook and stir sugar, flour, corn starch, water, and of salt until clear. Reduce heat. Cook and stir 2 minutes more. Remove from heat. Beat egg yolks. Slowly add 1 cup of the heated mixture to eggs. Gradually add egg mixture to remaining heated mixture. Add lemon juice, peel, and butter. Pour into 9” pie crust and top with meringue. Bake at 325⁰ for 20 minutes, or until meringue is golden.

  • 6 Tbsp. sugar
  • ¼ tsp. cream of tartar
  1. Beat the egg whites and cream of tartar until stiff peaks form. Gradually add sugar and until dissolved.
