Berry Ricotta Quesadillas

Berry Ricotta Quesadillas

Ingredients
Per quesadilla:
  • 1 flour tortilla
  • ¼ cup ricotta (or drained cottage cheese)
  • 1½ tsp. brown sugar, or sweetener of choice
  • ⅛ tsp vanilla
  • A few drops of lime juice
  • 1 cup of fruit, we like berries, sliced, and very slightly mashed
  • 1-2 Tbsp. powdered sugar
  • A few drops of lime juice
  • Butter
Instructions
  1. Combine the ricotta, sugar, vanilla, and lime juice.
  2. Prepare fruit with sugar and lime juice
  3. Heat a pan and butter one side of tortilla. When the pan is hot, put tortilla in, buttered side down. Cook until lightly brown and bubbly. Butter the side of tortilla that is face up, and flip. Spread the ricotta mixture on the tortilla, or just plop it on, your choice. Take out of pan when the tortilla is golden brown, place on plate. Put half the berries on the cheese and fold over. Then cover with the rest of the fruit.
  4. If you want to dress it up a little, top with vanilla yogurt, whipped cream, or vanilla ice cream.
