Pumpkin Oatmeal Pancakes

Pumpkin Oatmeal Pancakes

  • ¾ cup all-purpose flour
  • ¼ cup oatmeal, raw
  • 1½ Tbsp. sugar (didn't try brown, but it would probably be very good)
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • Cinnamon (maybe ¼ tsp.)
  • Ginger (maybe ⅛ tsp.)
  • Nutmeg (a dash, I think)
  • ¼ tsp. salt
  • 1 beaten egg
  • 1 cup buttermilk
  • ¼-⅓ cup pumpkin (forgot to measure)
  • 2 Tbsp. oil, optional (I forgot it and didn't miss it)
  1. This is the typical dry/wet mixing method.
  2. I just took the regular buttermilk pancake recipe and made the above changes. Are they as good as the ones from years ago that I lost the recipe for? I don't know, but Paul (the non-pancake lover) even thought they were pretty good. Linda ate half of one before she realized there was oatmeal in it, and lost interest. (I think her words were "You put oatmeal in these? Yuck!")
