Ingredients
Marinade:
  • Freshly-squeezed orange juice
  • Garlic
  • Onion
  • Pepper
  • Salt
  • Cumin
  • Cilantro
  • Fresh-squeezed limes
Instructions
  1. Marinate a skirt steak (preferred, although flank can be used) for 4 hours or overnight (overnight is best) in a Ziploc bag. After marinating, grill. Slice against the grain.
Notes
The citrus is important for the marinade – it’s what makes the meat tender. Add the rinds of the oranges and limes to the bag while marinating.
